  • Sex and the Oyster

    The American oyster, Ostrea virginica, spawns in the spring when water temperatures reach 68°F. A simple release of sperm and eggs followed by 3 larval and 1 post larval stages produces the next generation. Now get this, oysters can change gender. They may start as a male and turn female as they grow older. Oysters larger than 3 inches are probably female.
